Pork Souvlaki
Making Greek food is one of my favourites types of cuisines – not only is it super scrumptious, it is the epiphany of comfort food (see my recipe for Greek Moussaka for true realisation of this).
If you’ve read my entry on my trip to Heraklion, Crete, you will see how much I have adored the way that the Greek’s use their ingredients to create simple yet creative foods. One ingredient that is used quite widely in their cooking is the herb Oregano – in the dry form. Oregano has a slight peppery taste, and if you use too much then it can be quite bitter too, therefore I like to mix a teaspoon of dried basil alongside it to add a slight sweetness.
